Toasted Almond & Blueberry Steel-cut Oats

A must try breakfast recipe. This toasted almond & blueberry steel-cut oats has the right combination of crunchiness from the almonds and burst of sweetness from the blueberries.

Lately I find myself eating this very same toasted almond & blueberry steel-cut oats recipe for breakfast every morning. It is official, I am addicted! The best part, it is easy and quick to make especially if you woke up super hungry. I usually pair this with a side fruit for extra sweetness since I choose not to add sugar.

Use a small cooking pot, add your 80 grams ( yields to 1/2 a cup) of steel-cut oats, 1 tablespoon of chia seeds.

Add 8.5 fluid ounces of unsweetened almond milk. Then put the small cooking pot on med-low heat on the stove-top for 10 minutes or when it starts to boil.

Use this time to place 6 raw almonds to toast on low until they are golden (every toaster oven is different). I use the Farberware Air Fryer Toaster Oven where I toast the almonds for 4:05 minutes. Then lay them out to cool.

Using the back of a spoon, press or crush the almonds one by one on a cutting board.

After the oats have started to boil, allow it to continue to boil for another 5 minutes or until it is creamy when stirring. When warm enough, add the 6 crushed toasted almonds, and 2 ounces of blueberries and enjoy!

Side note: As I mentioned earlier, I do not add sugar since the blueberries burst with sweetness, but it is optional.

Ingredients

  • 80 grams ( yields to 1/2 a cup) of Steel-cut Oats

  • 6 Raw Almonds

  • 2 ounces of Blueberries

  • 1 tablespoon of Chia Seeds

  • 8.5 fluid ounces of Unsweetened Almond Milk

Instructions

  • In a small cooking pot add 80 grams ( yields to 1/2 a cup) of steel-cut oats, chia seeds, and 8.5 fluid ounces of unsweetened almond milk.
  • Put the cooking pot to boil on stove-top on med-low for 10 minutes or until when it starts to boil.
  • Put 6 raw almonds to toast on low or until it is golden.
  • After almonds have toasted, put them out to cool.
  • Use a cutting board and the back of a spoon to press or crush the almonds (one by one).
  • Once the oats have started to boil, allow to boil for another 5 minutes or until it is creamy when stirring.
  • When the oats are warm enough, add the 6 crushed toasted almonds and 2 ounces of blueberries and enjoy!
  • This recipe does not have added sugar but it is optional.
