Baked Vegan Sausage, Sweet Potato & Brussels Sprouts

This versatile baked vegan sausage, brussels sprouts & sweet potato are just that: versatile. It can be a side dish or the main course.

This recipe can make a great meal or side dish. It has a mixed taste that is both sweet (coming from the sweet potatoes of course) and savory (coming from the brussels sprouts).

Not only is this a plant-based recipe, but it is also low in fat. It is tailored for those who are counting macros, or simply trying to keep their fat intake to a minimum.

Using a cutting board and knife, dice 731 grams of sweet potato or yam, and halve 353 grams of brussels sprouts. Put them in separate mixing bowls.

Use this time to preheat the oven for 10 minutes at 375 degrees. Using the same cutting board, cut the sausage at a 90 degree angle to your desired thickness. For this example, Field Roast’s Smoked Apple Sage Sausage was used.

Now is time to add the spices! In the sweet potato mixing bowl, add 1/4 of a teaspoon of onion powder, 1/4 of a teaspoon of garlic powder, 1/2 a tablespoon of dried oregano, and 1/2 of a teaspoon of salt, 2 servings of avocado oil spray and mix well.

Now, add the sausages to the sweet potato mixing bowl and mix well. Place the diced sweet potatoes and sausages in a baking pan and in the oven for 30 minutes.

In the brussels sprouts mixing bowl, add 1 serving of avocado oil spray and mix well.

Once the 30 minutes are up, add the brussels sprouts in the same baking pan mixed all together, and bake for another 5 minutes. The reason they are added later is to prevent the brussels sprouts from being overcooked. Once ready, then enjoy!
